Morningside University students, faculty and Food Bank of Siouxland employees gathered at the Cargill Outdoor Classroom to dig up fresh produce for the local non-profit.
The on-campus garden provided 1,300 lbs. to the Food Bank to distribute to its over 100 agencies throughout their 11-county service area.
“This is exactly the kind of food that we want to be giving out to the people that we serve. It’s healthy, it’s fresh, it’s locally grown, and I think an extra gold star because it’s Morningside produce coming from students who are in the process of learning and how to produce this food,” said Valerie Petersen, Associate Executive Director of Food Bank of Siouxland.
Though the school year just started full time, students and staff who were on campus during the summer tended to the garden donating to local pantries such as Grace United Methodist Church.
